Harissa spiced Cod

- 3 tbsp Avocado oil
- 3 tbsp Capers
- 2 tbsp Shallots
- 2 Garlic Cloves
- 1½ cups Cherry Tomatoes (halved)
- ¾ cup Water
- 1½ tsp Harissa Seasoning
- ¼ lemon
- 2 cups Arugula
Heat a large frying pan over medium heat.Once hot add the Avocado oil and capers. Let them sizzle and crips for about three minutes.Lower the heat to low and add the shallots and garlic. Cooke for one to two minutes until fragant and the shallot is crispy.Add the half cherry tomatoes to the skillet and cook for 5 minutes.Dont over cook them.Add the water and salt. Cook until thickend slightly for around 5 minutes.Set aside.Pat dry your cod and make sure its dry before seasoning. Season the Cod with the harissa spice on both sides really well.Heat a skillet over medium high heat, add 1 tbsp of avocado oil once hot and smoky place the cod and sear both sides for 2-3 minutes. Do one at a time. When done add the cod into the pan with the tomatoe mixture and over low heat simmer for additional 2 minutes covering the fish with the sauce.When serving,add extra capers, drizzle the tomatoe sauce on top, add a lemon wedge, arugula and enjoy!
