If I had to choose between pumpkin things and apple things, apples will always be my pick. Don’t get me wrong I Iove everything pumpkin and look forward to fall season so we can start making all the pumpkin things, but apples are just sooo good. But cooked apples are always best. This isn’t an overly sweet recipe and thats why I love it so much, when you remove the sugar from any recipe you can actually taste the ingredients and it just becomes a totally different experience. We are used to things so artificially sweetened that we cant longer enjoy food if sugar isn’t in them. Back to the cake, the warming spices make apples shine and the addition of the apple sauce makes this cake incredibly moist. A must try.
Apple Spice Cake
- 3 Eggs
- 1/4 cup Coconut sugar
- 4 tbsp Butter
- 1 cup Apple sauce Unsweetened
- 1 cup Grated apple No peel
- 1/3 cup Coconut flour
- 3/4 cup Arrowroot powder
- 2 tbsp Cinnamon
- 1 tsp cloves
- 1 tsp ginger
- 1/4 tsp Nutmeg
- 1 tsp Vanilla paste
For the crumble:
- 1/2 cup Pecans
- 1 tbsp Coconut Sugar
- 2 tbsp Arrowroot Powder
Pre-heat oven to 350F.
Line a 6x2 inches round pan with parchment paper.Set aside.
In a bowl mix butter,sugar and vanilla and eggs. Mix well.
Add apple sauce along with the grated apple.
In a separate bowl add all the dry ingredients, mix and add into the wet ingredients, mix until well incorporated.
Add mixture into the lined pan, assemble some apples and the crumble on top.
Bake for 40 minutes or until a toothpick inserted into tye middle comes out clean.
Let the cake rest in the pan for 15 minutes, invert cake into a plate and allow to cool down completely.
